What is "Teriyaki chicken"?
Teriyaki is a cooking method in which food is grilled while being coated with a sweet sauce based on soy sauce. The sugar in the sauce makes the surface of the food shiny and gives it a teriyaki-like appearance, hence the name.
Benefits of ”Teriyaki chicken”
Chicken cooked in a thick, sweet and salty teriyaki sauce is healthier than fried chicken because no oil is added during grilling and the oil from the chicken is also removed.

I used to love teriyaki chicken when I was a kid. They used to put it in my lunch box and I looked forward to eating it.

Mirin

Eden Foods Mirin, Rice Cooking Wine, 10.1 FL oz - 300ml
Step1.Mix seasonings.
Mix soy sauce, mirin, and sake together.
Step2.Grill chicken thighs.
Pierce the skin with a fork to make many holes.
Tap to flatten to an even thickness. If the thickness is uneven, it will be overcooked or undercooked and will not cook evenly.
Sprinkle potato starch on the meat. Do not coat the skin with potato starch. This is to make the skin crispy.
Place the chicken thighs skin side down in a hot frying pan. Wipe off any oil with kitchen paper.
When the skin is crispy, turn the chicken over and cook the meat over low heat.
Step3.Pour the combined seasonings over the meat.
Cook down the mixture, turning it over occasionally so that the seasonings are incorporated throughout. Do not cook too much because you want to keep the skin crispy.
When the seasonings have simmered down and become viscous, turn off the heat.
Finish
Lay the cabbage strips on a plate, cut the chicken and place it on top of the cabbage.

If you fail in cooking and produce food that does not taste good, it is okay.
