Miso ramen noodles are easy to make at home.

If you can make ramen, even easily, you will not have to eat ramen from restaurants that may contain a lot of MSG, and you can make and eat ramen with only ingredients that are good for you.

 

Miso ramen noodle recipes
When I was in high school, I worked part-time at a ramen store.

 

When I got used to serving customers and could afford to watch the store's kitchen, I discovered the basics of ramen. The base soup for the ramen that the store served was chicken broth boiled in a large pot. 

 

For soy sauce ramen, we would add about 2 tablespoons of "soy sauce sauce sauce" (made by boiling kelp and aromatic vegetables in soy sauce) to a ramen bowl and combine it with the chicken broth.

 

"I see, so this is how soy sauce ramen is made."

 

The next thing I saw was putting the chicken broth into the ramen bowl and dissolving the miso later. I thought to myself, "So miso ramen has the same broth!"

 

In other words, this is how it was. The soup was the same, but soy sauce ramen was made with soy sauce tare, miso ramen with miso tare, and salt ramen with salt tare.

 

I will make miso ramen easily based on chicken broth.
It is the easiest arrangement, and I will introduce miso ramen with minced meat and vegetables at a later date.

 

First, here is a recipe that you all can easily try with ingredients that you might be able to find in the US.

Please be careful not to burn yourself when making or eating. Good ramen is hot, not lukewarm. If you think you might burn yourself, cook it lukewarm to be safe and eat it.

If you can get noodles for ramen, make them there. If not available, you can substitute pasta.

Step1. Put Chinese chicken broth, hondashi, Miso and Grated garlic, Grated ginger, Lard in a bowl and pour hot water.

Step2. Boil noodles.

If you cook pasta with baking soda for a long time, it will look just like ramen noodles.

1.Boil more water in a pot.
2.Put salt and baking soda in a pot.
3.Once boiling, add pasta and cook for the prescribed cooking time + 2 minutes.

 

Step3. Add noodles.

4.After the noodles are cooked, drain the noodles in a colander and add them to the soup.

 

Finish
Top with boiled eggs and green onions if desired. Miso ramen with butter on top is soooooo good! It is even better if you add corn too.
