What is "Pickled chives in soy sauce"?
This is a free side dish found in Japanese ramen restaurants: pickled chives in soy sauce. It is simply chives marinated in a soy sauce, mirin and sesame oil sauce, but it is very, very tasty. You can enjoy it over udon noodles, tofu, rice with chives, beer, and many other things.

Pickled chives in soy sauce
Material/ Serves 2
Chives
50g
Syouyu
(Soy sauce)
50ml
Mirin
(sweet cooking rice wine)
1tbsp
red pepper
1pinch
Sesame oil
1/2 tbsp

Eden Foods Mirin, Rice Cooking Wine, 10.1 FL oz - 300ml
Step1.Wash chives and drain well. Wipe dry with paper towels.
If not thoroughly wiped dry, they will not be eaten quickly after cooking.
Step2.Cut the Chinese chives.
You can cut them into chunks or strips, whichever you prefer.
Step3.Put chives in Tupperware and add soy sauce, mirin, sesame oil and red pepper.
After 12 hours in the refrigerator, they are ready to eat.
Finish
It will keep for about 5 days in the refrigerator, but should be eaten as soon as possible.
It is delicious to eat chives as they are, and the sauce is very tasty when used in cooking.
