Miso
1tbsp
Sugar

Marukome Miso Gluten Free Vegan, 13.2 Ounce
Step1.Mix sake, mirin, sugar, soy sauce and miso.
Step2.Cut eggplant into round slices.
I have heard that American eggplant has thick skin, so please peel the skin off.
Step3.Fry the eggplant.
Put vegetable oil in a frying pan and fry eggplant. When lightly browned, add 100ml of water and let the eggplant cook through. When the water evaporates, add the combined seasonings and fry.
