What is "Hamburg steak"?
Hamburg steak, also known as hamburger steak or hamburger, is a meat dish originating from Germany.
It is primarily made by mixing minced meat with finely chopped vegetables, adding breadcrumbs and salt to enhance stickiness, and then heating and solidifying it in a frying pan (or sometimes using a combination of an oven and a frying pan).

Step1.Preparation.
Chop the onion finely.
You can chop the onion into any size you prefer, but if it's too coarse, you'll feel a stronger texture of the onion. Also, when cooking hamburgers, they may break apart. Some people prefer to grate the onion and use it.
Heat Vegetable oil in a frying pan and sauté the finely chopped onion until it becomes soft and changes color. Once sautéed, turn off the heat. Let the sautéed onion cool for a while to remove the residual heat.
By sautéing the onion, you bring out its sweetness and remove excess moisture. If you sauté it slowly until it turns a deep golden brown, it will enhance the umami flavor of the hamburger by drawing out the sweetness of the onion. On the other hand, if you don't sauté it for too long, you can retain a crunchy texture. Adjust the cooking time according to your preference.
After sautéing, it's important to let the onion cool for a while before mixing it with the meat, as adding hot onion directly to the meat can make it difficult to bind and cause the fat in the meat to melt, resulting in the loss of flavor. So, let it cool for a bit.
For a balanced combination of fat and flavor, we use both beef and pork. Using only beef ground meat gives a strong meaty flavor but can be prone to dryness, so adding beef fat is sometimes done. On the other hand, using only pork ground meat results in a tender texture.
It can be delicious to use 100% beef as well. A coarse ground beef patty made entirely of beef brings out the assertive flavor of the beef and provides a satisfying texture. Mixing in pork adds richness and juiciness, making it equally delicious. I encourage you to experiment with different ratios of beef and pork to find your preferred taste.
Put the ground meat into a bowl.
Add milk to the breadcrumbs. To prevent the ground meat from becoming watery and difficult to mix, let the breadcrumbs absorb the milk.
Let the breadcrumbs sit aside until they absorb the milk.
Add 0.8% of salt to the ground meat.
Knead the mixture thoroughly by hand until it becomes sticky. It's ready when it forms threads between your fingers or when a slightly whitish fat sticks to the bowl. Keeping your hands chilled in ice water will yield the best results.
Mix together the chilled sautéed onions, breadcrumbs soaked in milk, pepper, and nutmeg, and thoroughly combine them.
Step2.Let's start cooking the hamburger patties.
Once you have lightly shaped each patty, toss them back and forth between your right hand and left hand, like playing catch, about three times to remove air pockets. Removing the air pockets helps prevent the patties from cracking or forming gaps when cooked, keeping their shape intact.
Shape them into an oval form and press the center slightly with your finger.
As the patty cooks, the center will gradually puff up, so before cooking, lightly press down the center with your finger.
Heat 1 tablespoon of Vegetable oil in a frying pan and start cooking the hamburger patties. Cook them over high heat for about 1 minute, then reduce the heat to low and cook for about 3 minutes. Flip them over, cook for another 1 minute over high heat, cover the pan, and cook for about 3 minutes over medium heat. Then, transfer them to a plate.
First, sear the surface of the patties to lock in the flavors. Then, by steaming them, you ensure that they are cooked tenderly throughout. A general guideline for doneness is to insert a skewer into the hamburger patty and if clear juices come out, it is done.
Step3.Please pour it onto the plate.
Serve the hamburger patties on a plate along with a salad, French fries, or other side dishes.
Add the sauce ingredients to the remaining juices in the frying pan and lightly simmer while stirring to reduce the sauce.
By utilizing the meat juices and fat, you can create a delicious sauce. If you're concerned about excessive fat, you can remove a little bit of it. Add 3 tablespoons of Worcestershire sauce.
Add 3 tablespoons of tomato ketchup.
Simmer lightly while stirring to combine and reduce the sauce.
Finish
Pour the finished gravy sauce over the dish, and it is ready to serve.
Enjoy it as soon as it is done.
I eat it without pouring gravy sauce and instead sprinkle some salt. Both ways are delicious.
