Salmon Meunière, Japanese Home Style

The original recipe’s salt quantity is much higher than I would normally recommend using all at once. Salt the fish lightly and adjust to your salmon and salt brand.

Ingredients

  • Salmon2 pieces
  • SaltUse lightly; original page lists 1 tbsp
  • Pepper1/2 tsp
  • Wheat flourAs needed
  • Butter15 g
  • Vegetable oil2 tbsp
  • Soy sauceUp to 1 tbsp, optional

How to make it

  1. Season both sides of the salmon with salt and pepper and let stand for about 10 minutes. Pat dry thoroughly.
  2. Dust the salmon evenly with flour.
  3. Heat the oil and cook the salmon over medium heat. After about 5 minutes, turn it over and continue cooking.
  4. Add butter near the end and baste, keeping the butter gently bubbling rather than burning. Add a little soy sauce if desired.
